Now that it’s winter here in sunny South Africa, less people are attending classes at the swim school that I work at, which means that I now have Wednesday mornings off. Well kind of, until 10:00, and then I have to make my way to class. So, in order to take full advantage of my “freed” up schedule, I decided to dive into the kitchen!
On my to do list were some Savoury Egg, tomato and spinach muffins (although this is quite a standard recipe I’ll pop the Recipe below), and then I wanted to make some sort of sweet, but equally healthy, muffin. Looking at my supplies I saw apples, eggs and oats… I know that banana is wonderful ingredient to bake and cook with, but an apple? Is not too ‘wet‘? Well, I’ve tried and tested it and the result is simply delish!
3 Ingredient Apple ‘n Oat muffins
Ingredients:
(makes 6 muffins)
- 1 grated apple
- 3 eggs
- 1/2- 3/4 cup oats (you don’t want the mixture to be too watery or wet)
See! I wasn’t lying, only THREE ingredients, okay, maybe 4 or 5 if you want to sprinkle some cinnamon, and drizzle a bit of honey on top!
Method:
- Heat your oven to 180 degrees
- Wisk the eggs in a bowl
- Grate the apple and pour into the egg mixture
- Pour enough oats into the bowl to create a “thickish” consistency, and mix altogether
- Grease the muffin tray, and pour the mixture into each compartment
- Pop your muffin tray into the oven and allow to cook for 20minutes, or until golden
- Place the deliciously fresh baked muffins on a cooling rack and allow to stand for 30 minutes or so, or until cool
- Sprinkle some cinnamon and honey (if you like things on the sweater side) over the top and enjoy!
The Egg, tomato and spinach muffins are just as easy to make!
Ingredients:
(makes 6 muffins)
- 4 eggs
- 1 handful of shredded spinach leaves
- 1 diced tomato
- 2 tablespoons raw oats (optional, I like to add the oats just to create a denser and more filling muffin)
- Salt and pepper to taste (optional, I think it tastes good just as it is!)
Method:
- Heat your oven to 180 degrees
- Wisk the eggs and oats in a bowl, add salt and pepper to taste
- Grease the muffin tray, and pour in the egg mixture into each compartment
- Place some tomato pieces into each muffin compartment
- Place some spinach into each muffin compartment
- Pop your muffin tray into the oven and allow to cook for 20minutes, or until golden
- Place the deliciously fresh baked muffins on a cooling rack and allow to stand for 30 minutes or so, or until cool
- Enjoy!
I hope you try and these deliciously healthy, easy, and convenient muffins just as much as my boyfriend and I did!
